Though called slow cooker beef stew, this recipe should more appropriately be titled Jen’s Childhood. A mere 2 hours into the pot and I can practically hear my mom calling me for dinner. This is down home cooking at its finest with minimal pre-meal prep. The veggies are packed with flavor and the meat comes out so tender every single time! I love to serve this on busy evenings, allowing me to do my chopping in the morning, throw it all in the pot and forget about it until supper. I typically pop a frozen baguette or two into the oven 12min before devouring and viola. Dinner is served!
One thing to note, if you’re like me, you took a long hard pause when you saw tapioca listed as an ingredient. If this didn’t strike you as odd, by all means, proceed to the recipe. For the rest of y’all that are envisioning lumpy pudding stew, oh contraire my friend. Tapioca is actually the key ingredient in this bad boy that gives the broth a slightly thicker consistency and makes it more stew-y. Stew-y. That’s the technical term. A food blogger I am not. Forgive my vernacular! Basically, it’s awesome, buy it and go with it! And if you’re still hazy on what exactly tapioca is, here’s the one I buy and I believe its sold by the puddings. I cannot totally confirm that though because Amazon Fresh brings me all of my groceries and I may never leave the house again. Woot Woot! Kidding. Sort of.
OK, one last note. I feel the need to address the fact that my crock pot appears to have been punted across the kitchen. In actuality, I believe one of our movers drop-kicked it whilst grumbling about all of my kitchen paraphernalia. Though our moving company compensated us for it, I couldn’t part with the ‘ol gal who still works perfectly well. I did warn you I am not a food blogger, yes?
